In A. A. Milne’s poem, “Rice Pudding,” which I delighted in reading throughout my childhood, Mary Jane cries at the mention of rice pudding again. As for yours truly, I recently made a batch and have been feeling sorry for Mary Jane missing out. It is so good I can’t wait to have it again.
In case you’d like to make some, here’s my recipe:
2 cups basmati rice, cooked in a saucepan.
Add enough unsweetened almond milk to cover the rice. And then a little extra just because.
Simmer for a few minutes with
1/2 lb. raisins,
1 tbs. of cinnamon, 2 tsp. cardamon, 1/2 teaspoon nutmeg, 1/4 tsp. anise.
Say the magic incantation: Mush kush, mush kush, stir stir stir.
Allow to cool on stove, then in fridge. Indulge!
